Optimisation du procédé de fabrication du <i>tchapalo</i>, bière traditionnelle ivoirienne par le plan factoriel fractionné

Abstract

Le plan d’expérience, précisément le plan factoriel fractionné a été appliqué sur la méthode de fabrication artisanale du tchapalo pour l’amélioration du procédé. Ainsi, après définition du domaine expérimentale, le criblage des facteurs a mis en exergue l’importance de la phase du brassage, notamment les étapes de décantation, de cuisson et de pré-cuisson qualifiées de points critiques. Il a également permis l’obtention d’un système d’équation appelé modèle mathématique dont la résolution a défini les conditions améliorées de la fabrication artisanale du tchapalo. Par ailleurs, ces conditions permettent un gain de temps allant jusqu’à 5140 min, soit 3j 13h 40min. Les coefficients de variation largement inférieurs à 15 % permettent de valider le modèle mathématique dans son domaine expérimental défini.

Optimization of the process of manufacture of the tchapalo, traditional beer of the Ivory Coast by the fractional factorial plan

The plan of experience, precisely the fractional factorial plan has been applied on the method of artisanal manufacture of the tchapalo for the improvement of the process. Thus, after definition of the experimental domain, the sifting of the factors put in inscription the importance of the phase of the brewing, notably the qualified stages of decanting, cooking and meadow cooking of critical points. It also permitted the obtaining of an equation system named mathematical model whose resolution defined the conditions improved of the artisanal manufacture of the tchapalo. Otherwise, these conditions permit an active time gain until 5140 min, either 3j 13h 40min. The extensively lower coefficients of variation to 15% permit to validate the mathematical model in its definite experimental domain.
